frequently
asked
questions

  • Are you really French?
Well, if you take a look at our names, they’re probably as French as you can get! Thibault is from Brittany and Renaud is from the Loire Valley, with accents that are très strong — especially for those who’ve met Thibault at the markets! We used to be 100% involved in the day-to-day operations, and we know people miss us. But we’ve now built an amazing team (few of them speak French, though it’s not a requirement). We appreciate everyone being understanding and kind with our teammates — they’re the heart of our bakery!
  • When is The French Guys Bakery closed?
New Year's Day: January 1st Easter Sunday: April 20th — Modified Hours Independence Day: July 4th Thanksgiving Day: November 27th Christmas Eve: December 24th — Modified Hours Christmas Day: December 25th
  • Why is the menu different between the farmers market and stores?
There are a few reasons for that. For one, we don’t have a fridge at the markets, so we can’t offer savory items or desserts. Our selection is also smaller compared to what we have at the bakery, usually around 15 to 20 items. However, these are typically our core offerings and best sellers, so you’re getting the best of what we make!
  • Where does your flour come from?
We’ve been working with Cairnspring Mills in Burlington, WA, since day one. Their flour is incredible — no preservatives, just high-quality ingredients for making great bread. We also use French T65 traditional flour for our baguettes, grain, and rosemary loaf and some French T45 Gruau flour for our laminated dough to bring an authentic French touch.
  • Do you have an allergen list?
Yes, see our complete allergen list here!
  • Do you have gluten-free products?
Thank you for asking! Our expertise lies in traditional French baking, which naturally contains gluten. We focus on crafting authentic French pastries with the finest ingredients and techniques. While we don’t offer gluten-free options, we’d be happy to recommend other bakeries in Seattle that specialize in gluten-free treats!
  • Do you deliver?
Sadly, we’ve stopped the door-to-door delivery service that we offered at the beginning of our journey. But guess what? We’re working on an exciting new CSA Program linked to our farmers markets during the slow season. Who wouldn’t want fresh croissants, bread, and more delivered directly to their door? Stay tuned for more details here!
  • Do you do custom orders or desserts?
Our model is a bit different from most traditional bakeries. We operate with a central production hub and everything is delivered while you're still dreaming and enjoying your morning rest. Because of this, we're unable to bake something special on the spot or offer custom orders. But here's the good news! We do have a set dessert menu for special events, and you can place orders for those with 72 hours notice at our storefront. We’re happy to help make your events a little sweeter!
  • Do you offer catering or wholesale?
Yes! See here for our full catering/wholesale menu and contact capitolhill.tfg@gmail.com with any inquiries.
  • Do you have gift cards?
Yes, you can purchase gift cards here! Gift cards are available both online and at the store, but please note that they cannot be used at farmers markets. We hope you find the perfect treat with them!
  • Do you have merchandise?
Yes, our merchandise is available at our storefront. We offer a mix of T-shirts, hats, tea, coffee, stickers, mugs, and more. With the upcoming U-Village location, we have big plans to expand our merchandise section and bring even more exciting options to our customers!
  • Do you donate to local organizations and nonprofits?
Of course, we’re big on minimizing waste. Every day, all our unsold items from the markets and storefront are brought back to our production facility. From there, our local Food Bank at St. Mary’s picks them up twice a week. Our market team also trades leftover bread with other vendors. After a summer market shift, what’s better than receiving some fresh flowers or juicy tomatoes in exchange? Additionally, our store team enjoys free meals during their shift, as we believe in keeping them well-fed while they work hard to bring the taste of France to our customers!
