OUR STORY

How two French guys became The French Guys Bakery

The French Guys Bakery brings a taste of France to the heart of Seattle.

 

Founded by two French friends, Thibault Beaugendre from Brittany and Renaud Lacipiere from the Loire Valley, our journey began with a simple dream — to share the rich traditions of French baking with our Seattle community. We both arrived in October 2019 and first met during a ski trip to Snoqualmie later that year. From that moment, a friendship was born, leading to a shared passion for crafting authentic French pastries that bring people together.

AOÛT 2020

Renaud, a highly skilled baker who trained with Les Compagnons du Devoir in France and traveled the world to perfect his craft, and Thibault, an MBA graduate with a strong sales background, came together to create The French Guys Bakery.

 

United by a shared desire to bring the authentic flavors of France to the Pacific Northwest, we set out to craft everything from timeless classics to the specialties of our hometowns. Blending traditional French techniques with locally sourced ingredients, we committed to bringing a true taste of France to Seattle.

 

And with that, The French Guys project was born — a journey fueled by friendship, expertise, and a love for exceptional pastries.

FÉVRIER 2021

Renaud was a baker at La Parisienne French Bakery and Thibault was working at Amazon when we first shared our vision for The French Guys.

 

With La Parisienne’s support, we used their bakery to produce pastries for our first two farmers markets — Queen Anne and Renton. We also launched as a mobile bakery to bring the taste of France straight to people's doorsteps, delivering fresh-baked goods four days a week.

 

This service became a meaningful way to connect with our community during the pandemic, offering comfort through the simple joy of fresh pastries.

JANVIER 2022

A major milestone for The French Guys Bakery was transferring Renaud's visa from La Parisienne to our own company, marking a new chapter in our journey. We moved into a commercial kitchen at Culinex Kitchens in Tukwila and hired our first employees. That year, we expanded to eight weekly farmers markets during the summer while continuing our local deliveries.

By mid-year, we were both fully committed to growing The French Guys Bakery. The foundation was finally in place, but we had even bigger dreams for the future.

MAI 2023

After months of hard work, The French Guys reached a major milestone: opening our first storefront in Capitol Hill. What started as a mobile operation was now a permanent home where people could enjoy French pastries year-round.

​

We also forged wholesale partnerships with several local coffee shops, and by summer, we were serving up to ten farmers markets per week.

With our focus now solely on the three pillars of the storefront, farmers markets, and wholesale, we knew it was time to expand. The French Guys production facility officially launched in SODO, a 3,000 sq. ft. space that allowed us to achieve even greater volume without compromising quality.

 

Today, we proudly serve twelve farmers markets in the summer, four in the winter, and have built strong wholesale partnerships with over 15 top-tier businesses like Fulcrum Roasters, Sip House, Overcast Coffee, Fuel Coffee, and more.

 

Our team of talented bakers and pastry chefs continues to grow, constantly evolving our menu with favorites such as baguettes, raspberry croissants, cannelés, éclairs, paris-brest, and more.

THE FUTURE

From a mobile bakery to full-scale production, The French Guys has been a journey built on friendship, hard work, and of course, delicious pastries.

 

We’re thrilled to announce that our Capitol Hill location is now open seven days a week, offering the French goodness you know and love all week long. And looking toward the future, we can’t wait for our next milestone: the opening of our second location in University Village in Spring 2025.

 

We’re proud of how far we've come and excited for what's ahead — bringing our authentic French pastries to even more of Seattle.

OUR INGREDIENTS

At The French Guys, quality is at the heart of everything we do: starting with our ingredients. We blend the best of both worlds — importing the finest butter and chocolate from France while locally sourcing our Cairnspring Mills flour, grains, and fruit from Washington State. We're also committed to preserving the environment without sacrificing quality by using compostable bags/boxes and avoiding unnecessary plastic packaging.

 

It’s this combination of premium ingredients, expert techniques, and a deep love for our home that creates our quintessential French Guys experience.
